The Science Bit
The root is a member of the ginger family and has been used traditionally as a spice, in both Egypt and India for at least 6000 years. The crop is generally planted in April/May and will produce lush green leaves as the rhizomes grow beneath the soil. The plant is generally ready for harvest in Jan-March.
